chocolate 300 grams
sugar 2 tbs
cream 1 cup
cocoa powder 1 tbs
gelatin 1 tbs
vanilla custard powder 2 tbs
full cream milk 1  1/2 cup
1 1/2-2  cup whipped cream

Instructions:

  • whip 2 cups of tetra pack cream and separate out a half cup of cream

  •  break the oreo cookies into smaller pieces (preferably in 4 pieces) and put them aside for the base

  • Dissolve 1 tbs of gelatin in 2 tbs of hot water and stir well
  • bring the 1 1/2 cup of full cream milk to boiling temperature then add 2 tbs of sugar in the boiling milk
  • mix 2 tbs of vanilla custard in 2 tbs of unsweetened cocoa powder and add a lit bit of cold milk to the mix to make a paste then add the cocoa powder paste to the boiling milk and stir

  • add 100 grams of chocolate to the milk and remove from the burner and mix slowly so the chocolate dissolves and you get a think composition. Put the pan away this will be your mousse
  • Put 1/2 cup of cream on the stove to boil adding 200 grams of chocolate it in a stirring to get a smooth paste this will be the ganache

  • now add the mousse to the 1 1/2 cup whipped cream and add the gelatin solution then mix well and let to cool to the gelatin can solidify due to which the mousse will be able to retain its shape

ASSEMBLING:
pick a serving dish, I choose a glass since its transparent and it would show the layers of the parfait more prominently
start by making the base filling the bottom of the dish with oreo cookies
then add the mousse on top of the oreo biscuits making a thick layer followed by a layer of ganache, another layer of Oreo cookies and a final layer of whipped cream on top
